½ cup whole dry roasted almonds
3 Tbsp cornmeal
2 Tbsp grated parmesan cheese
Ground pepper as desired
1 Tbsp whole wheat flour
2 Tbsp lemon juice
1 pound catfish fillets
- Grind the almonds and mix with the cornmeal, parmesan cheese, whole wheat flour and pepper.
- Sprinkle the lemon juice over the catfish & coat the fillets with the almond mixture.
- Place the fillets on a baking sheet and bake at 400 for 8 minutes or until cooked through.
